“待用咖啡”的意大利语是caffe sospeso，这个传统起源于意大利南部城市那不勒斯的咖啡馆，在那里人们可以提前多买一两杯咖啡，给其他可能比较贫困的咖啡爱好者享用。
后来的囊中羞涩的顾客可以问问是否有“待用咖啡”，如果有就可以不用付钱也能喝上一杯热热的咖啡。
这个主意如今已经在全球范围内在网络上引起了轰动，欧洲和北美的咖啡店也都加入到了“待用咖啡”运动中来，该活动的脸书主页获得了超过2.8万个“赞”。
“待用咖啡”在意大利有着悠久的传统，从二战开始慢慢流行起来。法新社上周报道称，在欧洲经济受到重创的情况下，这个传统在其他欧洲国家也渐渐固定下来。在保加利亚超过150家咖啡馆加入进来。
在加入此项传统的咖啡馆里，顾客们可以问问是否有“待用咖啡”提供，如果有就可以给他们提供咖啡饮品，这都是因为某位陌生人的善心之举。

历史
一则2010年的报道指出这项传统早在100年前就已经存在，但在意大利经济奇迹时期锐减，剩下上流社会人士在圣诞节期间会进行此项活动。另一则2008年的文章则认为此活动在当时已过时，作者访问了三家咖啡店都已经至少15年没有进行过这项活动。
意大利文中“sospeso”这个词是由意大利作家Luciano De Crescenzo在一篇文章《Il caffe sospeso: Saggezza quotidiana in piccoli sorsi》中所创造的，而这篇文章也推广了这个消失已久的老文化。2010年时的一份报道称那不勒斯足球俱乐部的主席奥瑞里欧·狄罗伦提斯还因球队获得胜利而捐出10杯待用咖啡。之后这个文化在保加利亚、基辅、墨尔本、魁北克、及俄罗斯等地被报道并传开。2011年圣诞节时荷兰还有捐赠咖啡享受折扣的风潮。英国的星巴克在2013年4月主动推出待用咖啡的活动，不过星巴克会将咖啡换成等值的现金捐赠给英国慈善团体Oasis Trust。英国的一些咖啡店也因举办待用咖啡的活动受到新闻媒体的报道。
2013年1月，德国有心人士在Facebook上创立“Suspended Coffees”（待用咖啡）粉丝专页，吸引超过80,000人按“赞”。此专页亦在各国善心人士支援下创立许多当地版本的专页，吸引世界各地的人注意。
象征
在环球金融危机与欧债危机期间，待用咖啡被视为是基层社会团结的象征。2004年，一个慈善机构Ronde della carita在复活节举办了giornata nazionale del sospeso待用咖啡慈善活动。2010年，意大利几个着重于人权的艺术节日上都举办了Rete del Caffè Sospeso慈善活动。2011年12月，Giornata del Caffè Sospeso慈善活动在国际人权日上举行。还有一个网站“1café.org”专门筹募待用咖啡。
衍生
2013年4月，台湾及中国大陆部分地区亦将待用咖啡衍生成“待用餐点”，使穷苦人家可享用免费餐点。有动物保护团体推出“宠物待用餐”使流浪宠物维持生存的基本需求。台中市政府亦成立“待用食物平台”方便民众捐赠待用餐，但各地多数餐厅还是呈现“捐多吃少”的情况。

How about buying a cup of coffee for someone you’ll never meet? It may sound like the latest trend in showy barista techniques, but a “suspended coffee” is much more heartwarming than asnazzylatte.
Born in the cafes of Italy’s southern city of Naples, the “caffe sospeso” -which literally means “suspended coffee” is a tradition in which someone pays in advance for an extra cup or two, which can then be consumed by a coffee-drinker-in-need later in the day.
A customer-in-need can then later ask if there is a “suspended coffee” available and have a hot drink without having to pay for it.
The idea has become an international internet sensation with coffee shops in Europe and North America participating in the movement. The Facebook page alone has more than 28,000 “likes.”
The tradition of “suspended coffee” is a long-standing tradition in Italy that increased in popularity after the Second World War. Agence France-Presse reported last week that the practice was starting to take hold in other European countries hit hard economically. More than 150 cafés in Bulgaria were taking part.
At cafes that participate in the custom, customers can ask if there are any “suspended coffees” available, and if so, they are supplied with a beverage, thanks to the kindness of a stranger.

国内由＠陈里 发起了类似待用咖啡的“待用快餐”公益活动，已在全国20多个城市200多家餐厅加入。
一个月前，一家咖啡馆推出了上海第一杯“待用咖啡”，倡导爱心市民为那些囊中羞涩又有需要的陌生人“随手多买一杯咖啡”。到今天为止，这一全新公益模式已经度过了充满争议的第一个月———30天来，围绕它的质疑从未间断。
记者调查发现，在国外方兴未艾的“待用慈善”在沪却水土不服，“待用咖啡”的困局，或是上海人无法回避的一堂公民教育课。
推广困境
目前全国已有逾20个省近30余家餐厅或单位加入到“待用慈善”行列中，“待用盒饭”、“待用饮用水”、“待用豆浆”、“待用衣服”等“随手公益”形式层出不穷。在上海，一方面是“待用咖啡”问世以来所面临的各方压力，另一方面则来自于“陌生人信任”危机的影响，几乎很少有企业愿意涉水这一新型慈善模式。
“待用慈善”，之所以风行西方，是因为它倡导在不增加个人负担的情况下随手公益，更倡导一种能持续传递温暖的“陌生人信任”。专家表示，“待用咖啡”的困局实则是一场社会信任的困局。在推动文明的进程中，信任壁垒的打破有个过程，它受到种种质疑是在情理之中。
打破信任壁垒，要做好两件事。一是公开，二是尊重。“企业要对认捐和受捐数量做到全程实时的透明，方便同步监督。”他认为，“待用咖啡”目前所遭受的质疑正是培育社会“陌生人信任”、开展公民教育的一个良好契机。
“我们愿意接受这场关于信任的考验。”咖啡馆负责人表示，他们已在微博上每天公布当日捐赠和认领情况，对于来领咖啡的人无论什么情况下都坚持一个原则：不问身份不质疑动机，从信任每一个受捐人开始，重建“陌生人信任”。
